Le restaurant PIGNON SUR MER, est situé face de la baie de Fort-de France, à Anse à l’ane dans la commune des Trois-Ilets à la Martinique.
The restaurant Pignon Sur Mer, is located in front of the bay of Fort-de-France, in Anse à l’Ane in the commune of Trois-Ilets in Martinique.
With the support of his wife Joelle, Christian BIAS created the restaurant in 1986. Its name PIGNON SUR MER refers to a Caribbean expression : “Pignon Kay La”, which literally means : “The Walls of The House” . There’s a similar expression in French : “ …avoir pignon sur rue”, which means “To Be Well Established”.
After attending a hotel management school in 1974, he joined the FRANTEL hotel team in mainland France, where he trained to prepare the group’s establishment in Martinique (new name CARAYOU hotel).
The dishes were created according to his inspirations with top quality fresh products.
The cuisine is mainly based on sea products while keeping a traditional Creole note with products from the land.
Below are some of the dishes that contributed to the notoriety of Pignon Sur Mer :
- Starter : Lambi salad with lime,
- Main course : Lambi stew and crayfish with garlic,
- Dessert : Coconut croquettes, coconut chocolate and as a tribute to our restaurant ; The Pignon Cup : 3 scoops of rum and grape ice cream covered with home-made pineapple jam and home-made passion liqueur.
In 2017, he decided to pass on this heritage to his son Eddy, who has been immersed in the culinary world since his childhood.
Eddy BIAS now operates 2 structures as a chef and manager, he continues to carry on the legacy of his parents with pride and determination. He does his utmost to maintain the original flavors and respect the values transmitted by his father.
